Veseko extends its product portfolio and starts to manufacture alginate pearls
Alginate is an interesting material for many reasons. It is a viscous gum which can be found in brown algae. It is used in a wide range of areas. We can find alginate not only in food industry, but also in pharmaceutical industry, cosmetics, dentistry or textile industry. Alginate (also called alginic acid or algin) belongs to the group of textures used for spherification. Alginate is a purely natural ingredient made of brown algae, and has very good gelling properties. This ingredient is used in molecular gastronomy mainly in connection with spherification, a technique which serves to make balls of various diameters.
The pearls have a very thin membrane (film) which is almost imperceptible in the mouth and it feels like if there was no solid substance. However, this thin solid membrane helps preserve the solid centre of bigger pearls, which you can spread in your mouth by your tongue against the palate and then it mixes with the drink.
